Yu Chun Naeng Myun

Let’s explain this right off the bat: naeng myun is a Korean dish consisting of thin, hand-made buckwheat noodles served in a tangy, crushed-ice laden broth.  Also found in the stainless steel bowl are thin slices of tender beef, julienned cucumbers, a hard-boiled egg, spicy chili dressing and pickled radish strips.

So if you’ve never had a craving for spicy cold noodles, I have four words for you: get a freaking clue. Naeng myun can serve as a completely satisfying lunch, particularly in the summertime. And few places do naeng myun better than Yu Chun, which specializes in the dish.  Yu Chun uses arrowroot, and therefore their noodles have a beautiful black color that resonates nicely against the deliciously red pickled radish strips.  Throw in some kimchi mandoo (dumplings) and perhaps a side of kitchen-cooked shortribs and you’ll be thanking me later.
