Thick cream
The key to a simple carbonara: 1) black pepper; 2) freshly shaved parmesan; 3) pancetta (not bacon); and 4) thick cream. It’s lack of the latter that did me in (2% milk is a poor substitute) and turned my meal into a breakfast pasta. Thick cream is also the key component to coffee at the Applepan.
